Haven’t been as busy in the kitchen this week as I generally am. The tireds, they happen now and again. The last homemade dish worth a mention, from a few days back: zucchini-cheddar soup.
The result of an EatingWell recipe, it was tasty but lighter than I had expected. It’s meant to be enjoyed cold as well as hot, so perhaps that explains it. I think I’m accustomed to the added weight of potatoes often found in creamier veggie soups. Still, we ate it all.
The soup was accompanied by Chicken Under a Brick1, which is always damned fine.
