A little more active in the kitchen this week than last, I’m happy to report. These meals were derived from recipes found at EatingWell. They are quick to prepare, they both involve asparagus – which I only now realized (!) – and they both utilize las frutas del mar.
Chili-Rubbed Tilapia with Asparagus & Lemon. Tilapia is the skinless, boneless chicken breast of the sea: that is, it needs a lot of help when it comes to flavor. This recipe ups the ante with chili powder and lemon juice, and makes for a very nice sauce with which to coat the asparagus. One pound of tilapia fillets should serve three people, four at most. Be gentle with the fish when turning it, as it will tend to fall apart with rough handling.
Sizzled Citrus Shrimp. Again with the lemon juice; also with garlic and white wine. It’s rather scampi-ish while being very light. The only way to ruin this is to overcook the shrimp, so watch your time. The recipe claims it serves four people, but don’t believe it. Divide this dish between two unless you want to be hungry again in half an hour. Accompanied here by asparagus broiled with olive oil, kosher salt, and white pepper.
